Arata Family Salsa!

Hello and welcome to the first official post of this food blog. I thought I'd start off with something simple and straightforward, but incredibly easy and delicious: salsa.


Growing up (and now), my father is the cooking parent. When I went to college, he gifted me a notecard recipe book with a few favorite, easy recipes from my childhood, including this salsa recipe.


I make this recipe all the time! It's good with tacos, chips, and is great on salads--the juices also make a great salad dressing.


Part of the reason this recipe is so easy is because the ingredient measurements are all to your taste. I'll include guidance on the ratios I usually use, but feel free to play around! And while there are a set of foundational ingredients, I often will add in additions based on what veggies I have and need to use.

Ingredients:

tomatoes (small, big, doesn't matter)

scallions

garlic

salt

pepper

red wine vinegar

olive oil







Sample measured ingredients:

While I will stress that the amount of each ingredient is up to your taste buds, I also understand that measurements are helpful. So here is one way to do it:

3 large tomatoes, medium diced

4 scallions, medium diced

4 cloves garlic, small diced

1 tspn salt

1/2 tspn pepper

3 tbsp red wine vinegar

4 tbsp olive oil


Directions:

Medium dice tomatoes and scallions, and small dice garlic.


Add salt and pepper to taste (you'll want more salt than you think since it absorbs into the tomatoes).


Add red wine vinegar and olive oil to taste. If you want extra salsa juice (which can be used as salad dressing once everything marinates), add more vinegar and olive oil.


Mix!


This salsa can obviously be eaten straightaway but is even better the longer it marinates.
